Our Pinot Brut is a fresh, elegant sparkling wine made from white-pressed Pinot Noir and Pinot Blanc, grown on calcareous soil. The sparkling wine base was spontaneously fermented without sulphur in a large, used wooden barrel and bottled after about a year. Traditional bottle fermentation and at least 24 months of yeast storage in the bottle before it is disgorged and mixed with a small dosage of 4g/l. This allows it to develop delicate aromas of citrus fruits and a hint of brioche. Creamy and well balanced, it has an animating perlage and a long-lasting finish. A fresh, harmonious sparkling wine.
