In the purely south-facing location of the monastery vineyards, 25-year-old Burgundian Pinot Noir clones grow on calcareous soil. The warm location ensures fully ripe grapes and a rather early maturity, while the coolness of the soil gives the wine an impressive freshness and mineral tension. The Pinot Noir is matured exclusively in French barriques, with a small proportion of new wood. Berry notes meet ethereal notes and fine spice. On the palate it is juicy, with polished tannins, deep minerality and a firm, precise finish. A concentrated, slim and vibrant Pinot Noir that reflects its origins in the limestone.
